Un percorso ricco di dimostrazioni e laboratori pratici, che si snoda attraverso gli spazi allestiti dal trust bolognese per l’alimentazione sostenibile.
Maxi e mini makers a lavoro
Nell’Officucina, i classici utensili da lavoro si mescolano agli elettrodomestici e alle tecnologie più innovative. Due serre automatizzate coperte, connesse a internet ed Open Source, saranno attivate per ridurre drasticamente il livello di nitrati nocivi nella lattuga. The Algae Factory mostrerà ai curiosi un bioreattore per la produzione di spirulina, utilizzato per la creazione di barrette di alghe e cioccolata.
Nell’area Kids, i più piccoli potranno partecipare a laboratori che spazieranno tra la scienza e la tecnologia in cucina. Con il supporto di Sara Belloni, docente di matematica e scienze, e Alessandro Candiamo, ingegnere ed ex ricercatore dell’Università di Parma, si giocherà alla scoperta della biologia del cibo. L’ingegnere energetico Matteo Sanarico accompagnerà i piccoli makers alla scoperta delle infinite reazioni chimiche che ogni giorno si sviluppano in cucina.
Degustazioni
All’interno del Food Tech Jungle sarà possibile assaggiare cibo personalizzato e creato attraverso le nuove tecnologie in mostra al Maker Faire: dai piatti 3D di By Flow ai cocktail edibili di Dovetailed, fino agli snack a base di spirulina di The Algae Factory. Il tutto servito con posate stampate in ceramica di Faenza da Claytchen o avvolto nel packaging innovativo di Crockabile.
Stand Food Makers
Tra i progetti presentati, anche la coltivazione a fondi di caffè di Funghi Espresso, la piattaforma hi tech per il monitoraggio della crescita delle piante di Perfrutto e l’utensile per la cottura sotto vuoto connesso ad internet di Eskesso. Per i più coraggiosi c’è Livin Farms Hive, per l’allevamento casalingo di insetti e vermi edibili.
Nel giorno di chiusura, il 16 ottobre, in occasione del UN World Food Day, due conferenze sui temi della food tech e ag-tech vedranno coinvolti ospiti internazionali in un dibattito sulle grandi sfide del futuro per un’agricoltura sostenibile.
Presenti anche i vincitori della “call for food makers” e della “call for schools”, quest’anno per la prima volta aperta anche a istituti alberghieri e agrari.
